Berry Breakfast...


I love camping! I love camping even more when there is fresh, nutritious food to fuel all the fun we have hiking, paddle boarding, kayaking, and swimming. I take a little time before we leave to meal prep so we have fast & easy meal options instead of spending our time at camp cooking or simply eating junk food all weekend.


This is a favorite go to of ours for camping but it is perfect for anytime! Chia Pudding Parfaits. This beauty is layered with homemade raspberry coconut chia pudding, all natural peanut butter, fresh berries & granola. I make several ahead of time without the granola to store in the fridge until I am ready to gobble one up for breakfast, lunch or a snack. They store great in the fridge for several days. I love to toss them in a backpack to enjoy on a long hike but they make a fantastic breakfast for those mornings you just want to relax or are short on time.


Raspberry Chia Pudding

1 cup frozen (defrosted) or fresh raspberries

1 cup all natural coconut milk

1/2 cup chia seeds

1-2 teaspoons natural sweetener like honey if desired


Place berries & coconut milk in a blender and pulse for just a few seconds. Transfer mixture to a small saucepan. Bring to a steady simmer avoiding a boil. Whisk in chia seeds, stirring well. Set aside to thicken for about 30 minutes. Once the chia pudding has thickened & has come to room temperature, assemble your parfait. Place about 1/4 - 1/2 cup chia pudding in the bottom of the mason jar, layer with a tablespoon or two of peanut, almond, cashew or sun butter. Top with your favorite berries. Place lid on the jar & store in fridge until you are ready to eat. I like to add a layer of granola when I am ready to eat it with some extra berries or bananas. This typically makes 4 mason jar parfaits.

***The granola will stay fresh for a few hours if you want to add the granola ahead of time.


Chia seeds are an excellent source of fiber, plus they contain lots of iron, magnesium, potassium, & calcium. This simple and easy parfait not only looks fabulous but it is fantastic for you! ENJOY
